Don't know much but here's what little I know:

People should make/bring the least impact to animals and the environment as long as the time they have on the earth. Therefore, you will find most Buddhists vegetarian, or at least they try to. Animals and the environment should be in harmony with each other, and people should fit themselves in as best they can.

Since Buddhism has the belief of reincarnation, that's also probably why animals are treated with respect, you may come back as one in the next life, who knows who you're dealing with today.

Hope that helps~!

Buddha's teachings were in affect, to save all sentient beings. Of course all animals are sentient beings.......most buddhists are vegetarian, and some are vegan. But this is more to do with personal choice rather than any doctrine, as Buddha while never killing or ordering the death of any animal for food, still ate with gratitude, any food his host offered, as to decline was a great insult to his host. It is said that Buddha died after becoming unwell after eating meat in a meal that was off. Most Buddhist are simply vegan or vegetarian out of a sense of compasion for all living things. With compasion comes understanding.
We atempt to live in harmony with our enviroment and not fight with it. The outer reflects the inner and so many buddhist enjoy creating beatiful tranquil gardens. Disrespect of our enviroment is ultimately self hatred. What is Zen, by Alan Watts, is a highly recomended book to read. That's Zen Buddhism. Easily read and hard to put down.

in a nutshell

live in harmony with your environment

do not allow any animal, fish, or living thing to be harmed by your actions

as Bjork says in one of her songs

I am a f*cking Buddist,
This is enlightenment.
