I know that vietnamese people love crawfish,,,although I dont see any receipes for crawfish online and i cant get them at any vietnam restaraunt.....is this a food that the immigrants adopted here in the states??

Though crawfish can be found in the waters around Vietnam, they are far more plentiful in the waters of the Gulf Coast. There are about 300 different species of crawfish, so those in Vietnam may be a different size or less meaty than those in the Gulf. I've never seen crawfish on the menu of a Vietnamese restaurant either, so I think it's a food that a lot of the immigrants did adopt here in the States.

I believe your.perception of Vietnamese people having a fetish for crawfish may have more to do with what's available to eat rather than the specific crustatian. There are a lot of half-breeds, like me, who immigated here and took up crawfishing for a living along the gulf states, unlike me.

Vietnamese like to eat fish in general, and I don't think they/we've adopted a taste specifically for crawfish. Vietnam's fish look closer to something you see on an alien planet in Star Trek than what we have here. There is a crawfish of sorts there, and I've eaten some myself. I've also eaten a lot of other things that you don't want to know about...
