Either one, unless you have it checked by an expert (probing or popping), you'll never even know. As a general rule females get larger though.

I have experience with both a male and female and I can tell you that the female is definately more apt to take a snap at me....

Temperment doesn't typically change from one to the other, females tend to be worth more because they can give you eggs. So it depends on what you want it for.
