3 options
Line a tray with a wet cloth (tea towel or something), ensure that the cloth comes over the edge and put it in a bowl of water - capillary action will ensure your plants get water when they need it (make sure the cloth reaches well into the water)
Other option is to fill and empty plastic bottle with water, turn it upside down into the pot (try not to spill too much) and this will slowly water whilst you are away.
Get someone to water them or take them to a friends house for their own holiday!

I just read this same question in my local newspaper's gardening section. The answer was to fill your bathtub with about 2-3 inches of water. Lay down an old towel in the bottom, place the plants on the towel in the water. They'll stay watered & hydrated for about a week.

Presumably you've tried asking someone to come in and water?
Failing that...
You could stand them in a tray on capillary matting, and leave the hose-pipe just doing a 'drip' (having first watered the capillary matting to get it damp);
OR, you could cut the bottom off large lemonade or water bottles - keep the screw cap on, but make a small hole in it - stick them in the soil, neck down, around the roots, and fill with water - so over the week, the water gradually disperses itself.

I always stand the small pots in water, and the big pots I fill a plastic bottle up with water and turn it upside down and stick it in the soil.

buy a timer watering device. They worked great for me when I traveled. EBay can help you with that!
