If you are talking about the pink banana squash, they are best eaten when they are about 6 inches long. although you can harvest when they are much larger. if you peel the skin, because it becomes hard as the squash gets bigger. Pink banana squash never actually gets pink, at leats mine never have, they start out a very pale yellow and turn to a bright yellow as they ripen. I really like their flavor, it is somewhat like crook neck with a more buttery-taste. The outside of the squash is very soft and easily scratch, so as you harvest set them aside where other vegi will not scratch them.
You can also harvest them when they are very large, cut in half(long) spoon seeds out and bake them in the oven for about 45 minutes at 350. They are delicious.

Now let's think about that. What color are banana's when you eat them? Yellow, but when you buy them from the store what color are they? A greenish yellow. So put 2 and 2 together and pick it when it's grenish yellow.
