Actually, this was on mythbusters the other day. Mentos work best (the mint ones), because they have tiny pores in the surface which trap air and make tiny bubbles, causing hundreds of simultaneous reactions with the caffeine and carbonated water. It only lasts a few seconds, so to make last for minutes, you would have to pump in the reactants continuously.
That's all I can give you. Maybe a chemist can give you more.

Mentos check out myth busters and Pop rocks
when you put a mentos in a bottle of soda it explodes like Vinegar and baking powder, it should last a good 5 mins if you use a liter, The same with Pop rocks but pop rocks are dangerous so dangerous that they had to put a warning label on them
