Is there a method how to place pavers down, so the water flow can all go in one direction nicely. I hate guess work!

Water movement will pretty much follow the slope you gave to the area your paving.

If you are using a sand bed to place the pavers in , then fall is not all that important. Otherwise use a 4' level and kept the pitch of the pavers at about 1/4 "

Lowe's and Home Depot often have classes for the beginners. What kind of pavers and the size as well as the level-ness of ground on which you're placing them are all important factors.

You might even call them and speak with the department at which you purchased the pavers.
