I have the first season on dvd and I noticed her voice sounded different. Is it a different person or her voice just... change?

Many shows do get better audio quality, at the start they are on a shoestring budget, but then are allowed to afford better audio equipment. Take Beavis and Butthead's starting episodes and compare them to later episodes and they will sound completely different.

Alex Borstein has always been her voice. I've noticed a lot of characters voices in other shows change after the first season, I always guessed maybe to make the voice a little more memorable to that character
Though Megs voice did change in 2000 when Mila Kunis started doing her voice.

I think both Lois and Meg because she sounds different, too. I know Alex Borstein does the voice for Lois now and Mila Kunis does the voice of Meg.

No its always been Alex Borstien. And as for that answer with Meg her voice has always been done by Mila Kunis. Years go by, people get older, things change.
