I would look for a mason apprenticeship program at your local community or technical college. They would have information on standards and lessons plans. If you are teaching at the high school level this should get you pointed in the right direction.

If you are teaching at the post secondary level you will need more expertise - try the National Masonry Association at http://www.masoncontractors.org/aboutus/chapterinformation/index.php

This web site should help you find educational programs in your area - I am sure they have standards for the profession you can get a hold of.

These are now referred to as trowel work courses. South Birmingham College run such courses if you contact their Course Co-ordinator I am sure they will be able to assist. The difficulty is finding suitably qualified tutors in this field because a good 'brickie' can easily triple a tutors salary. The website is sourced below.
