It is possible that your boss sees you about to commit an action that is libellous to her.
The injunction is just to stop you sending the letters until she can defend herself in court.
If the court finds in your favour your injunction will be lifted, however if you publish beforehand, you will have a libel case against you.

Are you involved in legal proceedings against your former employer? If so then what she probably means is an injunction to prevent you from sending your letter until after the legal proceedings have completed.
