I been in Valencia last winter and the city surprise me. Is the third largest city in Spain and is growing fast in a more "modern" way.
I highly recommended a visit to La Ciudad de las Artes y las Ciencias, spend a day there. The place is a modern Acropolis with futuristic buildings designed by the architects Santiago Calatrava and Felix Candela. The aquarium and the Imax are really good ones.
In the "old" part of the city you should visit the "mercado" building, probably the biggest in Spain, the Cathedral and the Minaret. If you like modern and contemporary art visit the IVAN museum.
If you go on summer and like the beaches you can go to Malvarosa ( check the trolley that run from the city to the beach).
Next year the city can be more expensive and crowded because the Americas Cup, the famous sailboat race. The city can also be crowded at the "Fiestas de las Fallas", is a big "party" where giant sculptures are converted to bonfires.
