Because during courtship there are no legal court rooms but only courtyards or backyards or gardens. But as soon as you progress to matrimony you invite occassions that MAY arise leading you to the legal COURTROOMS!

Because your primary goal is pair-bonding with your companion. Once the pair has formed, then you can act more like yourself, and so can your companion.
We are genetically predisposed to be pleasant until we have mated successfully. Once we have achieved that, though, we can go back to being our usual, unpleasant selves.
