Personally, I think that it should be left alone. It is a part of the culture, heritage, and tradition. People in developed countries do not want others to tell them who they should worship, what they should eat (pardon the parallel), what their traditions should be.
Instead of trying to change it, try to understand the meaning behind it. Quite often, it is done so that part of the soul or energy of the person can be passed into others - many times it is friends or family members who eat the dead to keep a bit of their soul alive in the body of the person who is still alive.
I know that it seems odd and mortifying to us, but in some traditions it is a great honor or just a way to remember loved ones.
