It depends on which cousin the cousin is to you. If he/she is your first cousin, then the daughter would be first cousin once removed or second cousin. If he/she is your second cousin, then the daughter is your first cousin twice removed or third cousin. In order for the daughter to be your niece, the cousin would have to be your sister or brother.
