I don't know, but I will tell you my daughter is 18 and my son is 13 now and they still want to dye the damn thing's. I thought I would not have to full with it anymore. Every year though, it's (ma can we dye easter eggs?) At what age will this stop? And when Halloween comes my oldest still want's to trick or treat. There's a problem!

I once read in a book that in Russia in the 1700's mothers told their children that we color eggs because Jesus's mother Mary, brought eggs to feed the people who were preparing his body for placement in the tomb and as they washed away the blood, it dripped on the eggs and turned a multiple of colors. I thought it was a nice folk tale.

As others have pointed out, the reason we have eggs at all is that Easter is a co-opted pagan holiday. If you're asking what sort of Christian meaning they feebly attempted to slap on the egg to help bring the holiday into the 'true faith', I dunno. If I had to make one up on the spot, I'd liken it to the rock that rolled away from Jesus's tomb.
