What types of rocks do snowflake eels like to hide under?

I would recommend a bit of PVC pipe covered in live rock so it is not as visible. You could cut it in half and put it up against the side of you aquarium so you could see the eel while it is hiding.
I always prefer Fiji live rock as it is fairly lightweight and porous
