I am currently removing red eye from a few photos, but my concern is the colour and contrast in some photos I have. I have access to Photoshop 7, but need help using the right tool options to improve the quality of the images.

Here is a Free course on learning some of the basics in Photoshop 7. Will likely help you with what you want to know now as well as what you will want to know as you do more editing.

Don't just do a blunt improvement of brightness/contrast. Photoshop is capable of doing this per channel -- That is Red separate from Green seperate from Blue. You'll notice one of the channels is MUCH MUCH granier than the others too (I think its blue, but don't hold me to it). Either way, it does make a difference how you manipulate photos on a per-channel basis.
