I noticed today while feeding the chickens that there is an enormous amount of big red ants taking off with the chickens food on the ground in their coop. I have seven hens, one rooster and four guineas. The coop is very big. I was wondering do they eat the ants too?

Yes,little red ones too. But you may have an ant problem that you should deal with, 'cause ants eat chickens too. I wouldn't put any poison in the coop. I would move the feeder and sweep up the ants to break their trail. You know one scout ant finds the source of food and tells the other ants where it is, then you have an ant problem.
