I think there's at least some truth to that. My dad was an MD, and he used to love to diagnose difficult cases. Once, he was treating a baby who was suspected of having jaundice. He did some research, and found that an excess of the substance in carrots could cause an orange/yellow coloration (even in the whites of the eyes) that resembled jaundice. He asked the kid's mother what she had been feeding the child, and she said that he was getting strained carrots almost exclusively. Case solved.
