A demonstration of a Hydro-electric generation plant
small volt meter from Radio shack ( milliamp DC VOLTS)
small electric motor "toy type"
dowel about 6"
cut a can lid (use snips) around the edges (about 1/8" apart and twist the metal 90* (Like a river boats paddle wheel)
PC-7 Epoxy (Hdw.stor) the dowel to the center of the lid
drill a skinny small hole in the other side of the dowel, and epoxy to the motor shaft (you're making a drive shaft from the paddle wheel to the motor). Affix motor to 1"x4" (with a hose clamp) piece of wood for a foundation.
(Keep 1x4 wood length just a bit shorter than the paddle wheel).
Hook up the two wires between the motor and the volt meter. turn on the faucet, put the wheel under the stream, the volt meter climbs, more stream (head pressure) you add, the electric motor (acts as a generator if something spins it) makes more electricity, this can be proven by our volt meter moving up.

Here are some websites devoted to the topic of Science Fair Project ideas:
http://www.a-plus.net/tom/hbms/scimet/webscifair.htm
This next one was actually posted by a high school librarian:
http://www.cfsd.k12.az.us/~ecwww/library/scifair.html
I checked this one out; click on a link and you will be taken to gazillions of ideas you could develop.
http://www.cdli.ca/~jbarron/sh.html
Ok, I don't want to overwhelm you. Within each of the above links, there are more ideas and, in the first two, more links to ideas.
Good luck, and if you need any more ideas, please feel free to contact me.

Chromatography. It's easy to demonstrate (check the Internet for examples) and it's used by forensic teams to solve crimes. Won me 2nd place back in the day.

i think it should be something simple... i hate to see kids take on this way complicated stuff and they have no idea what they are talking about and cant explain it to anyone . Kids seem to think they can say something about "genes" and "DNA" and that they sound all smart and they dont...
