You can list the degree and, instead of giving just a date, say, "Expected completion" and then the date you expect to finish.

Under education put the date that you will complete your MBA.

"finalizing MBA (4 classes remaining)" . . such and such school of business. . bla bla bla
or. .
"finishing MBA. . etc etc. . (either word is good). . finalizing or finishing . . (JUST don't misspell it!. . hehe)
