Be nice, deferential, help the guest with directions to the funeral home, etc., if necessary. If the guest is unfamiliar with the town, he/she will probably be confused, might need some extra help.
I've been to lots of funerals out of town - for close relatives, even my dad - and no hotel staff has ever done anything special. Might be a nice change.

i would say, hopefully your hotel does all it can to provide an atmosphere where all guests are made to feel welcome and in this case it may be wise to treat them with the same respect as the other guests,,,even if they have a relative who is deceased they may not want special treatment and may even hope no fuss is made on their behalf,,they should get all the thoughts and condolences from places they expect,,funeral home, relatives,,the hotel may be the only place of sanctury where they dont feel under preasure, and a place to leave their grief at the door for the time being.

Nothing......why do you think you owe some guest something special? Just do your job and mind your own business!

Give them a sympathy card and flowers and ask them if there is anything you could do to help.

the same as you would do for any other guest, if their is more then one you should give them a discounted rate. ASK IF THEIRS ANYTHING THEY NEED, LIKE THE LOCAL FLORIST.

Anything other than "I'm sorry for your loss." could be misconstrued, or considered insulting, whatever (grief is tricky).
