I'm not sure but maybe the Greyhounds, but I'm pretty sure there are quite some buses and trains from Penn Station that you can take.

yes they are but to go form NJ to AZ you will have to take more then one train and it would be looong.

amtrak should do it. out of grand central station in NYC no doubt.
