had some on my salad and can't figure out what exactly it is

Tabouli (or tabbouleh) is a Middle Eastern dish, often used as part of a mezze. Its primary ingredients are bulgur, parsley, mint, tomato, scallion (spring onion), and other herbs chopped with lemon juice and various seasonings, generally including black pepper and sometimes cinnamon and allspice. In Lebanon, generally considered to be its home territory, it is often eaten by scooping it up in cos lettuce leaves.

Spelled tabouleh...A Lebanese salad made with bulgur wheat and finely chopped scallions, tomatoes, mint, and parsley.

I love it...

It is a combination of parsley, tomato, onion, like cracked wheat. Lemon juice, and thahini. there are several recipies on the net check one out and try some.

Its base is parsley, very tasty. Morocco is Country of orgin.
