2/3 cup bulgur wheat
1/2 cup fresh mint, chopped
1-1/2 cups fresh parsley, chopped
1 large tomato, diced
1 medium cucumber, peeled, seeded and diced
2/3 cup green onions, chopped
1/4 cup extra virgin olive oil
1/3 cup fresh lemon juice
pinch of salt
Soak bulgur wheat in cold water for 2 hours (or as directed
on package). Drain well, squeezing out any excess water.
Mix all ingredients together in large bowl. Cover and chill.
Serve tabouleh mounded on a bed of lettuce, accompanied
by extra lettuce leaves, lemon wedges and warm pita bread.

Tabouleh is a combination of ingredients, salad like dish. I make it without the optional olive oil and garlic, but they are usually used. You can add more or less ingredients to suit your taste. Takes only 30 minutes to prepare and serves 8 people.

Ingredients
7 cups finely minced Parsley (1 large bunch)
1 1/3 cups finely minced tomatoes
3-4 tablespoons finely minced red onions
1 1/2-2 tablespoons bulgur
1/2 cup fresh lemon juice
2 tablespoons olive oil (optional)
1/2-1 clove garlic, finely minced (optional)
1 1/2 teaspoons salt
1/2 teaspoon pepper

Directions
Parsley, tomatoes and onions must be finely minced.
Combine the Parsley, tomatoes, and onions.
Prepare the bulgur as specified on the package; cool completey and add to the Parsley mixture.
Combine the lemon juice, olive oil, garlic, salt and pepper; mix well.
Add the lemon mixture to the salad, mix and refrigerate till serving.
Tabouleh should be eaten within two days.

Tabouleh - a popular Middle Eastern salad containing many vegetables, olive oil and spices.
INGREDIENTS:
2 bunches of fresh parsley (1 1/2 cup chopped, with stems discarded)
2 tablespoons of fresh mint, chopped
I medium onion, finely chopped
6 medium tomatoes, diced
1 tablespoon salt
1/2 teaspoon black pepper
1/2 cup bulghur, medium grade
6 tablespoons lemon juice
6 tablespoons extra virgin olive oil
Romaine lettuce or grape leaves to line servicng bowl (optional)
PREPARATION:
Soak bulghur in water for 1 1/2 to 2 hours in cold water until soft.
Squeeze out excess water from bulghur using hands or paper towel.
Combine all ingredients, except for salt, pepper, lemon juice, and olive oil.
Line serving bowl with grape leaves or romaine lettuce, and add salad.
Sprinkle olive oil, lemon juice, salt and pepper on top.
Serve immediately or chill in refrigerator for 2 hours before serving.

Tabulah is an Arabic/Greek saled. It is parsley cut up finely with some spices, tomatoes and other veggies, and lemon juice. it is really good
