I celebrate Kwanza which is an African American Holiday celebrating family, comunity and culture of the African. It's celebrated from Deb. 26th - Jan 1. The feast on the last day is called the "Karamu". Typically you would put together dishes that would have incorporated ingredients related to Africa and particularly ingrediants that were introduced to America by Africans. One in particular that I make which is also a perfect desert is called that "Banna Nut Coconut Cake". http://cake.allrecipes.com/AZ/BnnNtCcntCk.asp. This cake is extremely good... and it might serve well to your cultural cookbook.

Try looking at a pagan calandar. We have eight sabbats in a year, all *little* holidays. Lughnasad (Aug 1) was the most recent and the first of the harvest festivals, the christianized version of it is known as Lammas (which translates into "loaf mass") where the tradition was to bake bread and take it to church (if you were christian) or leave it as an offering (if you were pagan).
Mabon is next and is Sept. 21st, then of course the well known Samhain (Halloween)...

My family is from Germany, and we have a tradition at Christmas. I am not sure if it is because of the culture or just a family tradition that has been done for many generations, but we have peaches (cooked in this syrupy stuff) with pound cake for breakfast. It is absolutely delicious.

Passover: matzah, charoset
Shabbat: challah, gefilte fish

not exactly holidays, but more like cultural festivals. filipinos love to eat especially during fiestas, so there are a lot of food. some festivals are the sinulog (cebu), ati-atihan (kalibo, aklan), panagbenga (baguio city), pahiyas (san isidro, quezon province), masskara, dinagyang (i forgot what provinces they are) and many more.
as for christmas, it starts in september for filipinos but we dohave the misa de gallo for 9 days starting from december 16 until christmas day. people go to mass at 4am and the popular food there would be bibingka ang puto bumbong---perfect for cool december nights. :-)
