I am writing a cookbook for my job, and it centers around multicultural holidays. I would like to include something from the Jewish faith, and I want it to be accurate and something that is meaningful to the community.

I ask this question in a spirit of respect, and I would really appreciate it if all who answered did the same.

Well, you've come to the right religion! Every one of Judaism's festivals has special foods! Except for fast days that is ;)
You want a quick list?
Ok, here goes!
Passover: among other things, matza (like big crackers) + wine (red).
Pentecost: Anything cheesy. Specifically cheescakes
Rosh HaShana (Jewish New year): Apple dipped in honey
Tabernacles (Sukkot): this is about where we eat, more than what!
Chanuka: oily foods, speciffically donuts.
Tu B'ishvat: all fruits and nuts!
Purim: more wine, and "hamentashen" - triangular stuffed pastries.

I have always liked High Holly Days. I am not Jewish. And I guess I am not that nice because I have never been invited to a Sater. But I have always liked the Jewish Holidays.

Purim! i admire the costumes, sending (way too many) mishloach manot, the frivolity and favourite merriment. i admire being waiting to take photos (by way of fact it is not Yom tov) of the infants, and the excellent techniques-set of hopefulness and optimism. Hammentashen rock! (i ought to do without the gragger noise, however.)

I like "Hanuckah" and "Passover" the most. The most delicious feasts ever!
