Lita has always been a wrestler (and if you listen to the rumors, a real ring-rat back before she went to ECW)
Several have been in playboy, both before and after the became wrestlers. Candace Michelle did Playboy before she singed with the WWE. Ashley Massaro did as well. 2 or 3 of the current Diva Search contestants have done playboy, with one of them's pictorial coming out pretty soon
