Why do people's collective behaviour result in different patterns and deviations?

Because the norm is just the average behavior when you add up all of our deviations...

Why do people choose to "not deviate" and go with the flow?

Some people are more intelligent than others... some people are prettier... some people have been blessed with wealth while others were stricken with poverty...

There are so many aspects to our personalities that no one person is considered completely normal...

Having a job is "normal" but it's not even possible for some people...
Dying your hair is "deviant" but some people think it's the right thing to do in order to "look normal".

Well, when it comes to questions like this, the answers will all be variable. Every different person you ask will have a different idea about deviation. There are just too many standpoints to get a true answer. Its like making a fact from an opinion. There is no answer.

More importantly, why do people choose to conform to the behaviors of others? We have the right of free choice, but you're suggesting we shouldn't use it?

We are not the same at all. Why would you think that I was even remotely like you except in our physiology? We weren't raised the same, we aren't related (that I know of), our life experiences are drastically different. How could we even come close to behaving the same way?

When you say the answer is either black or white I see shades of grey that you haven't even addressed. Not just in this question, but for questions throughout my life. I'm a pretty law-abiding citizen, but don't expect me to take your directives and do as you say, just because you say it. I need reasons that meet my needs in order to comply with other peoples wishes.

I'm not different from most people, just maybe more honest about who I am.

People don't choose to Deviate. People choose to conform. Deviation is the nature of humanity. Just like our skin and hair is different so are our interrests and beliefs.

From a sociologists point of view, cultural deviation is as
inevitable as species deviation.

That is, different groups of people are forced to respond to
different sets of problems and therefore they evolve different
techniques.

For instance, the concept of "personal space" tends to
be extremely dependent on the culture you are in, which
tends to be very dependent on how people in that
culture interact and how closely packed they are.

When people are starving, "fat" is the new chic.
When people are dying of problems related to obesity,
"thin" is in, etc.

Ego, or sense of self, is what drives each and every individual. We seek to compare ourselves with others around us to validate who we are. If we do not think ourselves unique, we are less driven to live productive lives.
However, it takes great strength of character to step outside the boundaries of 'normality' and be truly different. To rebel against ones society and upbringing is not the same as to be separate.
To grow and learn we must step outside of our comfort zone and have faith in ourselves...

People are a function of their experience in life. They see the world from their personal experience. If their personal experience is different from your experience, then they will not be normal compared to your definition.

Put a person who is a foreigner in a new society, and that person will be different. (deviant)

For some people, society doesn't allow for them to behave in a manner that's in keeping with their sense of self. GLBT people are sometimes considered "deviant", but it's not as simple as "choice".
