Many may be either outsourced or run by the hospital auxiliary to raise money. In either case, I'd be surprised if there was a purchasing agent so much as a shopkeeper. So the good news is it will probably be as easy as calling the shop and asking to speak to the person responsbile for deciding what items are stocked in the gift shop. Most places I've called like that have no issue sharing that information. If they ask why, you just have to have a "what's in it for them story" like "I have some great things that will help your store make a lot of money."
