Your best bet is to rent a bike and go to Red Rock Canyon which is about 20 miles west of the Strip. Its a BLM, Interior Dept park that you can ride through, about 5 miles up and down and around, very scenic. Bike riding near the strip may be difficult as it is crowded nearly 24 hours a day. I would suggest calling the concierge of your hotels for recommendations.
