shifting eyes while he talks. Don't say "look me in the eye and tell me the truth" because anyone can force themselves for 10 seconds to look into your eyes. No, rather it's during his explanation of where he was.
rubbing or subtly touching his nose will also indicate lying. this is because the heart rate does raise (even if slightly) which induces more oxygen intake, and the nostrils will flare, the sudden flare will create a tickle in the nostril, and he will inevitably rub off the tickle.
Voice tone raising. If his voice tone raises and falls more than usual, this will indicate lying as well. This is a tactic used by habitual liars. They want to make out the lie to be real and "no big deal" and thus making you feel as if you are the one being unreasonable- basically putting you in an 'offensive' position and if you were to question him further, this would make you appear as if you were the one who started a conflict.
My advice after all this is that no matter what age you are, you're too old and too smart to even question it. If a man can not make you feel secure (and let's say he really isn't cheating) you will always be bickering about what is true and what isn't. You deserve better.

How do you know? Beats me. Can he change? I believe so. I have lied to my wife. I had an affair and I didn't tell her. That's lying. I never lied about anything else, but the one I did tell was devastating. Why do I believe a guy can change? Because I will never do it again. I know it as an absolute without doubt. My wife may never forgive me or take me back, as a matter of fact I'm getting more sure of that every day. The improvement in myself is not to get her back, it's for me as a person. So yes, I believe things can change if the person really wants them to. I know it first hand.

Some people lie because of low self esteem. People can change as they builld a strong personal view of themselves.
Ask yourself the question. If you were a liar, how would you change?

Has he lied to you before? If he has and you caught him then you should be able to recognize the same behaviors. Will he change? If you are asking this then you already know the answer...NO

His lips will be moving, but seriously, he won't be able to look you in the eye longer than 5 seconds.
If he is a liar, he will always be a liar, it is in his nature, he can't help it.
