I'm truly sorry to hear that...
My friend organised for a singer to perform Andrea Boccelli's The Prayer. It was really beautiful, but if its not appropriate for your friend maybe My Immortal, Evanesence or If Tomorrow Never Comes, Ronan Keating.

Again, it depends on musical preference of your friend. One I particularily like to hear at funerals is "time of my life" from Green Day, another one would be "My Way" from Frank Sinatra or from another artist.

As a fellow organist, here's the rule of thumb:
1.) what was his style of music---peace in the valley by elvis presley or green green grass of home by tom jones
2.) what are the family's wishes---amazing grace or the the night they drove ol' dixie down by joan biaz
3.) what was his "favorite holiday" --- like christmas or halloween?
4.) and maybe he's a naturalist---chirping birds and running streams....my best.
