1.when do 4 year med schools do interview? because im planning on staying at europe for 6 months.
2.can i apply for med schools during the 1st half of my senior year? or I should graduate first?

basic process for med school:
initial application in june
secondary applications in august-october
interviews from november-april
acceptance notification usually january - july
start in august or semptember.

applying during the fall is not advisable because they use rolling admissions, meaning that the people who applyed in june will be considered ahead of you.

how long it takes you to graduate is not a consideration.

least acceptable science gpa depends on the school, and I would say is not nearly as important as your MCAT score.
