I have a 1999 Nissan Maxima (VQ30DE 3.0l V6) with custom headers, a catback exhaust, and a highflow catalytic converter. I was wondering if it is possible for me to be losing power due to the lack of backpressure that is seen on a stock exhaust.

Yes, some fuel injected and carburated engines like a certain amount of backpressure. Without it, the engine is not running
as efficiently as it should. Will cause a drop in horsepower that
is noticeable on the dyno, or to a trained driver.
