I think you're thinking of the '70's. They had these awful puce greens and yellows and burnt oranges. Everyone did their kitchens in those colors, we did, too. We even had the puce green phone.
All I remember from the '60's of kitchen decor is that the white metal cupboards were in fashion with the chrome handles with white porcelain sinks. Tables and chairs were chrome with vinyl seats. This was a holdover from the 50's. It swung clear to the other end of the spectrum with the color schemes that came along in the '70's.

Colors come and go on the rotating field of popularity. Clothes tend to do the same thing. During the 60's, they were moving away from soft yellows and pale greens. Pop art was in style, as well as MOD clothes and colors.
Avocado Green, and Burnt Orange were the fad. So were platform shoes, long hair, and short skirts.
Guess what! The 60's have come almost full circle. We're back where we were to a certain extent.
Bottom line-people get bored with familiarity. Besides, by coming up with totally different color schemes for interior decorating, people will feel the need to go out and purchase these new colors so as to remain current and in style.
Buying new stuff just makes you feel good.
