Teachers often like the "what amazing things you learn from old people" scenario - it shows that you're maturing, or something. You might try having a 110 year old person walk in and tell you about all the amazing technological discoveries that have happened in his lifetime. How he was amazed when the first plane flew, or the first time he actually drove a car at 60mph - a mile a minute! Just about any technology you can think of, he was there when it happened, so you can make that interesting. An idea, anyway.

Interesting is relevant...and determined by the tone you wish to take. Are you going to be silly/funny, serious, insightful, or unique? Tell a real story or make things up? Do you want it to serve as an analogy or way to teach a lesson? Well, that said... If I were reading the essays I would like to hear about the day Jesus, Buddha, and Mohammed walked in. That would be interesting...wonder what would happen?.....Or maybe "I walked in" and what happens when you are confronted by yourself...what circumstances might have allowed that?!? Try a mythological creature? Celebrities you like? Long lost relatives? I'm tired....

You have some great responses already.
Know your direction: humor, serious, whimsical, etc
Know your audience: 8th grade teacher \ college prof
gather your "facts" (as you see them) a.k.a details
If you get stuck, keep to the basics: who (walked in) what (with what intention) where (did he\she\it come from, when (is it expected to leave), how (do you react \ is it going to leave \ will you feel once it is gone)??? all good questions.

Well it has to come from your personal interests. Who would you most like to meet? It does not have to be Gandhi or something like that. The writing will come best if you choose what really matters to you.

when.....in comes the mostwonderful ,gorgeous creature on earth. ( i presume you are a guy,right) this most beautiful lady with long, flowing hair with a porcelain face, soft features, bright red colored lipstick gliding into the room
her skin was pure snow.........etc.etc. she was beckoning me to follow her into the woods, ........
