In any single move a piece can only capture a single piece provided it will occupy the space originally occupied by the captured piece. Knights have the ability to jump around pieces.. but like the others can only take one piece at a time.
Any piece can kill any other piece. Following this rule, a knight could concievebly 'clear the board' but it would be difficult as winning in chess takes the 'team work' of all the pieces.

The knight can only take one piece at a time. Chess isn't Chinese Checkers where the knight can keep jumping over pieces and clearing the board.

Your question is How many peices can a Knight take at once? the obvious answer is one. A pawn can take any piece on the board with the exception of the King the same is true of all pieces. Still the most any piece can take at once is one.
