I love this question
why doesn't it "get started" or "ring"... I think it "goes off" because it is a comparision to something getting ready for a race, it waits and waits and waits and then BOOM... your HEART is racing because it "goes off!"

I'm not sure, but I have two theories:
1. If the old fashioned wind up type of alarm clock rings, it can physically move so it might fall to the floor. That means when it rings it might "go off" the desk or something.
2. After the old fashioned wind up type of alarm clock rings, the spring unwinds so it needs to be wound again or it won't keep time. The clock is now off.

Very interesting - never thought of it that way. I bet if we thought about it there are several expressions that would fit into the same catagory.
