Great question! I imagine it's to keep air bubbles out. I use a fork to make holes in a pie crust I pre-bake to make a chocolate pie for instance. It keeps the crust from getting big bubbles...lol and you can put in lots of chocolate pudding!

So they can cook thoroughly and faster...breathing holes... to make them crisp but all the same raise as opposed to chips that are just crisp and not thick..
