Mine seems fuel starved sometimes. Any ideas what it could be?

Richard G has a good idea, a bad throttle position sensor can cause a hesitation on acceleration.That is not the only cause but a possibility. Take it to a dealer or good shop and they should be able to quickly scan the PCM and see if everything is as it should be and check to see if it has the latest driveability updates for your on board computer.

Fuel filter or have the fuel pressure checked, fuel pump may ne weak.

Same problem with 95 Neon......was throttle position sensor

clogged fuel filter, short in spark plug wires, you could have a burnt valve, need more info really.

have you checked the oil? could be fuel injector is clogged.
