If you saw the movie "9 to 5" it was talking about secretaries...not college grads.
College grads get salaried jobs, are paid on the 15th and 30th of the month and have responsibility and they get a "salary" that is divided by 12 (months) and they are paid accordingly and don't have specific work hours but are expected to be in the office during others' (understudies) working hours.
Now to answer your question about a staff position. Some employers start their staff at 8:30 and they work till 5:00. Some have half hour lunch. Some (used to have) one hour lunch and two 15-minute breaks in-between. Some gave time and a half for overtime, and some gave time and a half for overtime over a certain amount of hours. Some have flex time but have to get in a certain amount of hours per week no matter what days they work or how long they work. Some even still have timeclocks.
Each employer is different. Employers used to give out a handbook...get one, read it carefully, understand it, and do what it says.

No, your lunch is not part of the 8 hours of work you are expected to do. Most office jobs are on a 8 - 5 schedule.

It depends on the job, but yes, any white collar 9 to 5 job must require a lunch hour. Whether you get an actual hour or just 30 minutes is up to them. And whether or not you get a paid lunch hour is also up to them. But to get the best answer, you should probably ask your employer...!

Your employer makes that decision. Usually salaried works until the job is done no mater how many hours it takes. Hourly works 8 hours with a lunch that is 30 to 60 non paid minutes long.
