Everything is energy. We are surrounded by it. It is something that flows through us, to us, and resonates a force for others. We are all interconnected in unfathomable ways. I recently became aware of the trickle effect...and it spreads far and wide...in ways we don't always comprehend...therefore, everything we do, everything we say, and everything we think has an influence. If you apply this concept in reverse...yes, everything is observed...in one form or another.

beyond the obvious mirrior and animal you are staring down that is going to eat your piece of meat, I have something for you to ponder on.
In many eastern philosophies they believe everything has chi, literally everything has life force that goes through it. You can reinvcarnate into rocks or trees not just animals. Based on this, you wonder if the rock has some rudimentary sentiance, that picks up all the actions around it. Many new agers believe this to :) so maybe when you look at the rock the rock also is interacting with you.
Scientifically speaking there is merit here, everything vibrates matter and energy, also it is a known law that when two different vibrations come together them make a third unique one. take 2 tuning forks and try it, it's amazing. Anyways when your vibrations interact with the rock and it interacts with yours you create a third harmony, and that's a sure sign that it has "seen" you.

When I stare deep into space, I can't help but to wonder if there are some other civilization staring back at us with their own telescope.
More frightening is whether our universe is an 'ant farm' or a computer simulation of a more powerful being and if that being is watching us with his microscope.
