You could try handfasting...it's basically a trial marriage but it isn't recognized as a legal form of union. It's where you and your partner have a ceremony where you vow to behave as if your married for a year and a day. At the end of the time, you can renew it or you can go on to a more perm form of marriage...

My girlfriend and her sig-other did a ceremony on the beach where they just said their own written vows. For personal reasons and other things, they couldn't legally marry. However, they called this a commitment ceremony and it was as nice as some weddings.
