what makes shaving cream foam when iy comes out of the can ?

I´m guessing it has something to do with the rapid change in air pressure. The air pressure in the can is super high, so when it meets the regular air pressure (1 atmosphere) it expands and becomes less dense.

The sprayer button is what makes it foam. If you pry the button off and replace it with a hairspray sprayer it will shoot out a super long string.

I believe it's the natural fats and goodness.
