Most types of grass in california need about 1 inch of water every five to seven days. Water at night. Less water is required in slow growth months or depending on the weather. Also don't over do it with the watering.

Never cut the grass too short.

A guide for grass types is below.
-Type of grass -mower setting -mow when grass reaches this height
Bent Grass 1/2 - 1 3/4 - 1 1/2
Bermuda Grass (common) 1 - 1 1/2 1 1/2 - 2 1/2
Bermuda Grass (hybrid) 1/2 - 1 3/4 - 1 1/2
Kentucky Bluegrass 1 1/2 - 2 1/2 2 1/4 - 3 3/4
Kikuyu Grass 1 - 1 1/2 1 1/2 - 2 1/4
Perennial Ryegrass 1 1/2 - 2 1/2 2 1/4 - 3 3/4
Tall Fescue 1 1/2 - 3 2 1/4 - 4 1/2
St. Augustine Grass 1 -2 1 1/2 - 3
Zoysia 1/2 - 1 1/2 3/4 - 2 1/4

For starters, only water at night. If you water while the sun is up the sunlight refracting through the water will actually burn your grass. Watering at night allows the moisture to absorb into the soil, thus nurturing the roots and 'feeding' the plant. (Your lawn.)
When you mow your lawn, make sure to rake up, or catch, any clippings. If you allow there to lay around on your lawn, they will keep the sunlight from the rest of it, and you'll end up with brown patches.

I agree with UniqueOne's answer, except I have found watering at night encourages fungus growth. I've had better luck watering the in the very early morning hours, shortly before the sun comes up. This give the water time to soak into the ground while it's still relatively cool, but lets the blades of grass themselves dry fairly quickly and thereby helps to prevent fungus growth.

On warm and dry days we water the lawn daily for at least twenty minutes. When it is very hot it could be advisable to do it twice a day for at least ten minutes each time.

You should water it weekly with at least one to two inches of water.
