Using the strict definition, a "compound word" is merely two words joined together to form a new word. Examples are football, underground, airport, whiteboard, supermarket, birthday, and bookcase. There are also many contractions in which two words are joined, and letters are removed and replaced by an apostrophe. Examples include don't, can't, won't, didn't, and isn't. However, brunch is very strange. I can't think of any words that are exactly brunch, in which the words are joined and letters are removed but no apostrophe is inserted.

brunch is not a compound word, it's a blend. Compound nouns are formed when two words are put together. An example is rainbow which comes from the word rain and bow.
Blended words are words invented by combining the sounds, meanings of two different words just like your example.
A blend is any word which is formed by fusing together elements from two other words and whose meaning shares or combines the meanings of the source words. The elements are normally the beginning of one and the end of the other.
smoke + fog = smog
slimy + lithe = slithy
chortle (chuckle + snort)
bang + smash = bash
clang + crash = clash
motorist + hotel = motel
motorcycle + parade = motorcade
