Depends on your assumptions about how creation works, doesn't it? Suppose God is content to create one teeny particle at a time, for instance. There's ample time in eternity, isn't there? and who is there to set deadlines for God? In this scenario, God works like a very lonely brickmaker, and of course any brickmaker can create things he can't lift.
Of course you can create a paradox--but the proper response to paradox is careful examination of the terms, and the rejection of terms, relational suppositions and logical objects that lead to inconsistencies. I usually reject 'God,' as the logical object most likely to lead to pointless gum-flapping.

There is no paradox here. Only the will to perform certain task. If the will of god is focused on creating a rock that he can't lift, then there will be a rock that he can't lift. But once that will is shifted to one which is determined to lift the rock, then he will be able to lift the rock. So at one point in time, there is a rock so heavy that god himself was not able to lift, but there is also a point in time that there is no rock so heavy that god couldn't lift.

Figureatively speaking this is exactly what hapened when he created free will. According to some Christians, god gave us free will and therefore no longer has control over us. He can suggest through signs and miracles but it is our choice what we do. In that he created something that he cannot control, or a rock he cannot lift.
Of course it depends on which of the many beliefs in god you subscribe to.

I have heard this one before. um mm, lemme see....... He created mankind who, in some cases, have hearts so heavy that even God himself could not lift it.

No, otherwise He would have been proven imperfect - this paradox has often be pinpointed as 'The not-so-Almighty Paradox' - hehe.
