Because science has advanced. People used to think that the four elements were earth, water, air, and fire, and that any observed property or action could be explained based on these four elements. But with the advancement of science we discovered atoms, molecules, and the true elements. We now know, for example, that water is a compound of two elements, oxygen and hydrogen.

Water is now found to be H2O. It is composed of two hydrogen atoms and an oxygen atom. Since we realized that water can be broken down into even smaller parts, it is not an element anymore.

I never knew that! But, I think it's because water is composed of different elements. H2O. 2 hydrogen (element) and 1 oxygen (also and element :D). I think that's it.
