It completely depends on the hotel/motel, but nowadays, it's hard to find a place that doesn't require a credit card. However, you should be okay with a pre-paid credit card or a debit card. Also, smaller mom-and-pops (who still trust everyone) and/or sketchy places (who rent by the hour) will take cash or checks (ahead of time to make sure the money is there).
I'd also recommend making a reservation, since it'll make the whole process easier. Here's a website with a bunch of hotels/motels/B&Bs/etc for Wisconsin Dells: http://www.dells.com/index2.html If the hotel has a website, they'll usually give you quite a few details as well (i.e. cancellation policies, credit card policies, etc).
Also, they'll ask to see your ID, in case you trash the room and since most won't rent to anyone under 18 (I don't think they'd ask to see your girlfriend's ID, but just in case, I'd have her sit out in the car while you're getting the key from the front desk).

It will certainly be more difficult to get a room. Some hotels are minimum age of 21, some are 18. You'll almost certainly need a credit card though, most will require this in order for your party to stay there. You'll probably have better luck staying at independently owned motels -- like those found on Aurora Ave north of downtown or a few of the motels near the airport. Most chains would probably turn you away. I'd either call around in advance or wait until you get here and just go from hotel to hotel until someone gives you a room.

Most of the time you need a credit card. I've stayed in a few places that took cash. When you call to book the room ask them first if they will take some other sort of payment besides a credit or debit card. A lot of them need a credit card to hold a room since you can't pay with cash over the phone.

The primary requirement at most motels or hotels is legal id.
Secondary as some of the other users have pointed out is a credit or debit card.
My advise would be to plan ahead and contact the hotel your planning at with and ask them what there requirements are.
Planning ahead also assures they will have a room available for you.

Most places do require a credit card to guarantee your reservation. Your best bet is to call in to make the reservation and ask them if you can send a check for guarantee -- some hotels still allow you to do that.
